MUFFINS de LIMÃO e SEMENTES de PAPOULA

Lemon and poppy seeds are one of those perfect flavour combinations, aren´t they? Here are my muffins!
Recipe
1 1/4 cups flour
1 tbs baking powder
1 1/4 ts cinnamon
1/4 ts salt
1 vanilla bean, scraped
2 tbs poppy seeds
2 tbs lemon zest
mix all dry ingredients

in a separate bowl, mix
1 1/4 stick unsalted butter, melted
1 large egg, room temperature
2/3 cup milk, room temperature
2/3 cup sugar
fold the butter mixture into the flour mixture and use NO more than ten strokes. 
Bake in a preheated oven(400degrees F) 15 to 17 minutes. Let cool in pan 15 to 20 minutes, transfer to wire rack. I glazed my muffin with a confectioners sugar and lemon juice icing and sprinkled some more poppy seeds.  


Muffins são, apesar da ideia corrente aqui no Brasil, diferentes de cupcakes: cupcake é qualquer bolo que você faz em forminhas pequenas; muffin é mais um pãozinho, super fofo e leve. Os ingredientes, é lógico, são os mesmos, mas acho que a proporção de líquidos é um pouquinho maior, e o pulo do gato é NÃO bater em excesso. Na verdade, é preciso misturar tudo à mão e com o mínimo de movimentos possíveis ( eu conto, rsrsrsrsrs, e paro no 10! )  
Muita raspa de limão siciliano e muita semente de papoula- que eu já mencionei aqui no blog, é proibida no Brasil, kkkkk
Receita
misturar numa tigela os ingredientes secos:
1 3/4 de xícara de farinha de trigo
1 col sopa de fermento em pó
1 1/4 col de chá de canela em pó
1/4 col chá de sal
2 col de sopa de semente de papoula
2 col. de sopa de raspas de limão
sementes de baunilha de 1 vagem 

e numa outra tigela, os ingredientes líquidos, todos em temperatura ambiente:
135 grs de manteiga sem sal, derretida
1 ovo grande
2/3 de xíc de leite
2/3 de xíc de açúcar 

acrescentar a mistura líquida à seca, e misturar À MÃO, com o mínimo de movimentos que você conseguir. A massa fica bem líquida e cheia de bolotas de trigo, mas é assim mesmo!
Assar em forno préaquecido a 200 graus por 15 a 17 minutos, deixar esfriar na forma de muffin por uns 15 a 20 minutos, e romover as forminhas de papel. Eu fiz uma cobertura de açúcar de confeiteiro e suco de limão no olho, e polvilhei com um pouquinho de sementes de papoula.

POPOVERS

Popovers are these light rolls made from an egg batter that gives them a pudding-like texture, I think!
I got my special popover pans and of course had to try the very easy recipe, and loved the rolls but for one tiny little thing: you have to eat them hot, because the cold popovers have no taste, so next time I am halving the recipe (I used this recipe here)!
I also had an incredible amout of fun watching the chemistry at work and seeing the rolls ballooning up in the oven! 

Popover é um tipo de um pãozinho de massa à base de ovos que fica com uma casquinha bem fininha e crocante e com o interior meio parecido com um "pudim"...São super fáceis de fazer, mas você precisa dessa forma especial que tem cada compartimentozinho separado, para que o ar quente circule uniformemente e asse os pãezinhos rápido. Dá para usar uma forma de muffin, mas aí você deve usar só as forminhas da volta, não as do meio. O único "problema" é que os popovers precisam ser consumidos quentes, na hora que saem do forno, senão perdem a crocância da casquinha finíssima e o sabor fica super comprometido :( Da próxima vez, vou fazer só meia receita. 
Agora, para quem curte a química da cozinha essa receita é o máximo! Dá para ver os popovers crescendo no forno e ficando enormes! A receita é super simples e eu usei essa aqui. Amei!

O rendimento da receita é de 10 popovers grandes, então fiz três de cebolinha, três simples, dois de laranja e dois de canela e açúcar.

SUKYIAKI


I am a huge fan of Japanese food, and to be completely honest, sushi and sashimi could be my staple diet :))) But I also love other dishes from this fantastic and rich - and very healthy- cuisine. Now, for sushi and sashimi, we go to Japanese restaurants, but Sukyiaki we cook at home!
Sukyiaki is a traditional stew type Japanese food, a winter dish also common at bonenkai, the end of year parties. It consists of a "stew" of meat and vegetables and it is wonderful for many reasons: it is delicious; it is very healthy because vegetables are the main ingredient; apart from the indispensable sauce, you can use any vegetable you like; the presentation is just beautiful; and it is a dish slowy cooked at the table, so it is the perfect for meal to have with friends and family!  
Eu simplesmente amo comida japonesa e poderia viver de sushi e sashimi. Mas acho que a cozinha japonesa é riquíssima e deliciosa (e super saudável ) demais para que fiquemos só nesses pratos, rsrsrs. Um prato que amo é o Sukyiaki! Sushi e sashimi, a gente come nos restaurantes; Sukyiaki, a gente faz é em casa!!!!!
Sukyiaki é um prato tipicamente consumido no inverno ou no ano novo, e é basiacamente um cozidão de vegetais. Eu adoro por vários motivos:  primeiro porque é delicioso, depois porque é muito saudável e leve, também porque você pode usar qualquer verdura ou legume de que você goste, a apresentação é linda, e o sukyiaki é preparado na mesa, então é perfeito para fazer com a família ou os amigos. 
I think that the secret to most of Japanese dishes is the sauce, but I think that onions, Chinese cabbage, thinly sliced beef, tofu and mushrooms are indispensable. As I mentioned before, you can use any vegetable you like, but my Sukyiaki isn´t the real thing without the ones above. Also, we use typical Japanese ingredients like konnyaku (jelly noodles made from a kind of potato), soba and tikuwa (a fish paste) We also use the traditional eggs in the recipe (which are totally optional), but we do cook them for a short while in the pan instead of dipping all the stew in a small bowl of raw eggs.

O segredo da comida japonesa está no molho, rsrsrs! Mas acho que Sukyiaki sem cebola, acelga, carne bem fininha, tofu e cogumelos não é Sukyiaki!!! A gente também usa alguns ingredientes  japoneses, como konnyaku (uma raiz semelhante à batata usada para fazer um tipo de macarrão transparente), soba e tikuwa (massa de peixe). A gente também usa os ovos, mas os cozinhamos um pouco no molho antes de comer, diferentemente do jeito tradicional que é colocá-los crus na tigelinha individual e depois colocar o Sukyiaki por cima.   

WE USE
for the sauce: 15grs sugar
                      50 ml soyo
                      50 ml mirin sake
                      50 ml kirin sake
for the stew: 
50gr butter
slices onions 
thinly sliced beef
Chinese cabbage
assorted vegetables
 melt the butter in the pan, add the beef and fry a little bit, add the onions and cook them until they are transparent, then add the Chinese cabbage (the cabbage is very important because it releases alot of water that will help to cook the other vegetables) , the sauce and the vegetables that are tougher. Let everything cook for a while, and then add the softer ingredients. When almost done, add the eggs. The dish takes a while to cook, so enjoy the wonderful smell and the company!

  
Nosso Sukiaki:
para o molho: 15 gr de açúcar
                       50 ml de soyo
                       50 ml de saquê mirin
                       50 ml de saquê kirin 
para o Sukyiaki: 
50 gr de manteiga
cebola em rodelas
carne fatiada bem fina
acelga
e qualquer outro vegetal de sua preferência
derreta a manteiga na panela, frite a carne, acrescente a cebola e deixe cozinhar até ficar transparente, acrescente a acelga (a acelga é extremamente importante porque ela libera muita água, que vai ajudar no cozimento dos outros ingredientes), o molho e os vegetais mais duros. Deixe cozinhar um pouco e acrescente os ingredientes macios. Quando estiver quase pronto, acrescente os ovos. O Sukyiaki demora para ficar pronto, então aproveite a companhia e o aroma delicioso do cozimento!!!!!!!!

SALTEÑAS BOLIVIANAS

Salteña is a type of Bolivian baked empanada, a savory pastry filled with beef, pork or chicken mixed in a sweet and very spicy sauce - at least this recipe is very spicy (similar recipe here). I belive they can be found anywhere in Bolivia, and when I came across this Bolivian recipe from a Bolivian newspaper I was thrilled. In this recipe, potatoes are added to the beef sauce, and boiled eggs and Azapa olives (the olives don´t have to be Azapa olives, but I simply love them so much I could put them in any savory dish I cook) are added to the filling before baking.
I made a vegeterian version of salteñas: cheese and caramelized onions filling. It may be a culinary sacrilege, I don´t really know, but the cheese salteñas were wonderful too! 

Saltenhas são essas tortinhas típicas da Bolívia, com recheio de carne, porco ou frango super temperado e meio doce (receita parecida aqui). São uma delícia! Fiquei maluquinha quando achei essa receita num jornal boliviano! Nessa receita, batatas são acrescentadas ao recheio, e antes de assar coloca-se um pedacinho de ovo cozido e de azeitona na tortinha. Eu uso azeitona azapa porque amoamoamoamo azeitona azapa, rsrsrsrs.
Eu "criei" uma versão vegetariana de recheio: muçarela com cebolas caramelizadas. Talvez seja um sacrilégio, mas ficou uma maravilha.

The dough itself is a fascinating combination of flavours.
I don´t have a lot of practice rolling out the dough, so the assembly takes me a long time, but the result is delicious. The recipe yelds like a ton of salteñas, that I freeze after baking...  

Como não tenho prática em abrir massa com rolo, essa parte da montagem leva séculos para mim ;))) Mas a receita dá uma quantidade enorme de saltenhas, que eu congelo assadas.

roll out the dough, place the sauce, add a small piece of boiled agg and a small piece of olive, brush a little bit of water on the edge of the dough disc, close it and turn the edges in.

Montagem:
abrir a massa, colocar o recheio, acrescentar um pedacinho de ovo e de azeitona, umedecer o canto da massa, fechar e virar as beiradas para dentro

oh, and they don´t look nice and perfect, but they are sooooooo good.
não ficam bonitinhas e uniformes, não, mas ficam super gostosas.

PÃO de QUEIJO


O pão de queijo, ah, o pão de queijo... originário de Minas Gerais e que tomou conta do país. Cada um tem uma receitinha, e acho que não tem muito como não ficar bom, né? Já ouvi/testei/experimentei receita de tudo quanto é jeito, de liquidificador, na forminha, com polvilho azedo, com guaraná (?!?!), com queijo desse jeito ou daquele, comprado em boteco, beira de estrada ou no "melhor pão de queijo segundo o guia X". 
Mas morando em Minas e "podendo" (rsrsrsrsrsrs) conseguir os ingredientes mais naturais, locais e tradicionais possíveis, eu elegi essa receita aqui como A receita : é fácil de fazer, dá uma quantidade enorme, pode congelar e é uma delícia! 
Quem me passou a receita da roça foi a Nilvana, que me ajuda aqui em casa. Os ingredientes talvez não sejam acessíveis a todos, mas imagino que no mercado municipal da maioria das cidades podemos encontrar polvilho doce desse mais grosso e queijo meia cura, não?  E é claro que se ainda pudermos usar leite de fazenda e ovos caipiras, aí o trem fica bão demais da conta, sô!!!! O pãozinho fica com uma casquinha super fininha crocante e o interior grudento. Ah, e eu sei que não é nada tradicional comer pão de queijo com geléia, mas é uma gostosura que só!  

If you have ever been to Brazil, chances are you tried the traditional and ubiquotous "pão de queijo" or cheese buns. These rolls are believed to be originally from the farms of Minas Gerais, and here in Brazil you can find them everywhere, in groceries, supermarkets, bakeries, streetside stands and industrialized. Which also means that there is a myriad of recipes and versions, and every family is likely to have their own recipe. And that also means that I have eaten and tried tons of cheese buns in my life! 
Pão de queijo is made of cheese, of course, and cassava flour, which is as Brazilian as it gets. Cassava is widely consumed by the native peoples of Brazil and we have incorporated it in our daily diets, thank God! We eat the root boiled, fried (OMG, one of my favorite foods ever, sooooooo much more delicious than French Fries. No, really!) and we use the flour in many biscuits and breads. I absolutely love everything made of cassava and am fascinated by it! 
I live in Minas Gerais, where it is possible to get a more natural, locally made, non- industrialized version of the two "no-substitute" ingredients: the meia cura cheese and the polvilho (cassava flour). And if you can add to that milk and eggs from local producers, a traditional "farm" recipe, well, you get a wonderfully delicious pão de queijo!!!! 
However, if you are far away and would like to try the recipe anyway, I suggest you look for the polvilho doce in Brazilian food shops or on the internet. The flour will be a lot more finely ground, which will make a huge difference in the final result, but still, you can try (in fact, most of the industrialized/ ready-bought buns are made with a very fine flour). As for the cheese, it has to be a harder cheese, not too salty.
              
RECEITA
Ingredientes:
1 kg de polvilho doce (mais grosso)
1 l de leite 
1 copo de requeijão menos dois dedos de óleo
1 colher de sopa de sal
1 prato cheio de queijo meia cura ralado
8-10 ovos
Preparo:
ferver o leite, o óleo e o sal. Escaldar o polvilho, e quando estiver quase frio, acrescentar os ovos até dar o ponto. Colocar o queijo por último, formar os pães e congelar! Nesse tamanho que faço, dá 75 pães de queijo.

RECIPE:
Ingredients:
1 kg polvilho doce
1 l milk
180-200 ml vegetable oil
1 tablespoon salt
1 dish-full of grated cheese
8-10 eggs
Instructions:
bring milk, oil and salt to a boil and pour the boiling liquids over the flour. Let the mixture cool and add eggs until you get the right consistency (and here I am sorry, you have to look at the pictures for reference). Add the grated cheese and roll the buns. This recipe yelds about 70 buns. You can freeze them.

ALFAJORES

Alfajores are a traditional confection found in many countries in South America, a distant cousin from the Spanish Alfajor, which is of Arabic origin. There are many variations in the Americas, but in Chile, Uruguay and Argentina the confection consists ot two round biscuits joined together with dulce de leche or jam, and coated with dark or white chocolate, or powdered sugar. It is one of my favorite confections, and there is a popular Argentinian industrialized version available in Brazil.   
But in my opinoin, the best Alfajores  in my country are made in a small family-owned factory in São Paulo, following the recipe of Dona Laila, the sweetest lady who you can find in the store if you ever want to try these wonderful little confections. Dona Laila, who was born and lived for many years in Argentina, happens to be a life-long friend of my husband´s, so when we go to São Paulo we visit her and enjoy her delicious Alfajores. She was kind enough to give me her recipe (similar here)  and even my first try at the sweet was a success in taste, and as a plus, no artificial extracts or preservative taste in my alfajores!!!! In the pictures you can see my alfajores with all their little flaws due to my lack of practice, ;) and as delicious as they turned out, they are no match to Dona Laila´s! 
Alfajores se tornaram bastante populares no Brasil, mas acho que a maioria das pessoas não sabe que o docinho é comum em grande parte da América do Sul, em diferentes versões, e que vem da Espanha, mas a origem do doce é árabe. O alfajor que a gente conhece melhor é típico da Argentina, Uruguai e Chile, o das duas bolachinhas recheadas tradicionalmente com doce de leite ou geléia e cobertos com chocolate ou simplesmente açúcar. 
Eu AMO alfajores, e apesar de a gente conseguir achar uma versão industrializada de uma marca argentina bem conhecida com uma certa facilidade, meus votos de primeiro, segundo, terceiro e quarto lugares vão para os Alfajores da D. Laila! A D. Laila tem uma fábrica em São Paulo, e é lá que a gente marca ponto todas as vezes que vamos para a cidade, pela delícia que são os alfajores dela, é claro, e pela doçura desta senhora nascida e que viveu muitos anos na Argentina.     
Aqui vocês podem ver minha primeira tentativa de fazer os Alfajores! (receita similar aqui) Não ficaram lá muito perfeitinhos, mas ficaram deliciosos, e sem nenhum gosto de essências artificiais ou conservantes, é claro! Mas não são páreo para os da D. Laila!!! BOLO no POTINHO!


I have seen this idea many, many times, and I always thought it cute to serve cake in a glass jar. I used my completely fool-proof recipe, the only cake recipe I know by heart, Carrot Cake with Chocolate Icing and I am really happy with what I got: cute little cakes in glass jars!!! :))) 

Essa ideiazinha de servir bolo em potinhos de vidro é super fofa e a venho namorando há tempos :))) Na dúvida, escolhi a receita mais à prova de falhas que eu sei, na verdade a única que sei de cor, a do meu Bolo de Cenoura, rsrsrsrs. E como os vidros não são temperados, assei o bolo numa forma comum e depois cortei os "bolinhos", cobri com cobertura de chocolate e pronto, fofuras em vidrinhos!   

I wasn´t sure if the glass jars I have were oven proof, so I baked the cake in a regular tin and cut out the smaller cakes.
And then I poured chocolate icing over the colled cakes...

So cute! 
Now I am moving to more challanging recipes. I may try a cheesecake next, we´ll see.
Agora vou tentar projetos mais ambiciosos, tipo cheesecake!!
